  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • Salt and pepper to taste
  • Toothpicks for securing

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C).
  • Prepare Filling: In a skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent. Add spinach and cook until wilted. Cool slightly.
  • Mix Filling: Combine the spinach mixture, feta cheese, and sun-dried tomatoes in a bowl. Season with salt and pepper.
  • Prepare Chicken: Butterfly and pound each chicken breast to an even thickness. Spoon the spinach mixture onto each breast, roll tightly, and secure with toothpicks.
