- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 5 ounces fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup sun-dried tomatoes, chopped
- Salt and pepper to taste
- Toothpicks for securing
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Filling: In a skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent. Add spinach and cook until wilted. Cool slightly.
- Mix Filling: Combine the spinach mixture, feta cheese, and sun-dried tomatoes in a bowl. Season with salt and pepper.
- Prepare Chicken: Butterfly and pound each chicken breast to an even thickness. Spoon the spinach mixture onto each breast, roll tightly, and secure with toothpicks.
- Bake: Place the chicken rolls in a baking dish, seam side down. Bake for 25-30 minutes until cooked through.
