- 2 tbsp olive oil
- 2.5 lbs / 1.25 kg beef chuck, boneless short rib, or any slow-cooking beef (no bone)
- ¾ tsp salt
- ¾ tsp black pepper
- 3 garlic cloves, minced
- 2 onions, chopped (brown, white, or yellow)
- 6 oz / 180g bacon, speck, or pancetta, diced
- 3 tbsp flour (all-purpose/plain; use gluten-free flour if needed)
- 440ml / 14.9 oz Guinness Beer
- 4 tbsp tomato paste
- 3 cups (750 ml) chicken stock or beef broth
- 3 carrots, peeled and cut into 1.25 cm / ½” thick pieces
- 2 large celery stalks, cut into 2 cm / 1” pieces
- 2 bay leaves
- 3 sprigs thyme (or substitute with 1 tsp dried thyme leaves)
Instructions
- Prepare the Beef: Cut the beef into 5 cm / 2” chunks. Pat dry and season with salt and pepper.
- Brown the Beef: Heat the olive oil in a heavy-based pot over high heat. Add the beef in batches and brown well on all sides. Remove the browned beef to a plate and repeat with the remaining beef.
- Cook Vegetables and Bacon: Lower the heat to medium. If the pot is dry, add a bit more oil. Cook the garlic and onions for 3 minutes until softening. Add the diced bacon and cook until browned.
- Add Carrots and Celery: Stir in the carrots and celery. Cook for a few minutes, then add the flour. Stir for 1 minute to cook off the raw flour taste.
- Add Liquids and Seasonings: Pour in the Guinness, chicken stock/stock, and tomato paste. Mix well to ensure the flour dissolves completely. Add the bay leaves and thyme.
- Simmer the Stew: Return the browned beef to the pot, including any juices. The liquid should just cover the meat. Cover the pot, reduce heat to a gentle simmer, and cook for 2 hours. The beef should be tender.
- Thicken the Stew: Remove the lid and continue simmering for an additional 30-45 minutes, or until the beef easily falls apart and the sauce has thickened. Skim off any surface fat if desired.
- Adjust Seasoning: Taste and adjust seasoning with salt and pepper. Remove bay leaves and thyme before serving.
- Serve: Enjoy the stew with creamy mashed potatoes for a satisfying meal.
Notes
- If the stew becomes too thick, add a bit more chicken broth or Guinness to reach your desired consistency.
- For added richness, use beef broth instead of chicken stock.
