  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • Kosher salt and freshly ground black pepper, to taste

Instructions

Combine Ingredients:

Combine the diced tomatoes, halved grape or cherry tomatoes, thinly sliced red onion, minced garlic, and chopped fresh herbs in a large bowl.

Add Dressing:

Drizzle with extra virgin olive oil and red wine vinegar. Gently toss to coat all the ingredients evenly.

Season and Rest:

Sprinkle with kosher salt and freshly ground black pepper to taste. Let the salad rest for 15-20 minutes before serving to allow the flavors to meld together.

Serve:

Serve the salad at room temperature. For added texture, consider including additional vegetables such as avocado chunks, cucumber slices, or blanched asparagus.

Notes
